kale salad

Had some leftovers for lunch today and I swear this recipe for kale salad with toasted coconut has turned me into a kale addict. I eat it multiple times a week. I'm so glad my sweet friends in Charleston introduced me to it. Today I accompanied some leftover cauliflower puree with it, topped with a leftover tomato from last night's caprese salad (Austin's recommendation) and I have myself a fulfilling lunch where once I again, couldn't care less about meat.
